How is non-alcoholic 'gin' made?
Alcoholic spirits start off as pure ethanol (a highly rectified spirit), and some non-alcoholic spirits are made using the same process as for low-ABV (alcohol by volume) ones. Botanicals and a neutral grain spirit are then added through a re-distillation process which produces a really potent, botanical alcoholic liquid – which is usually collected at a strength of 80% ABV. It then goes through multiple rounds of distillation to remove all the alcohol from the liquid, and is then diluted down with water to the right ABV.
