Pink Lady Apple porridge with pecans & cinnamon

This super healthy breakfast is a real winter warmer yet still tastes like a delicious treat. Adjust the ratio of milk and nuts to water to suit your family’s tastes and allergies.

Ingredients

  • porridge oats 150g
  • semi-skimmed milk 400ml
  • water 300ml
  • cinnamon ½ tsp
  • Pink Lady apples 2, cored & diced
  • soft brown sugar, or to taste 2 tbsp
  • pecans (optional) 2 tbsp, roughly chopped

Method

  • Step 1

    Place the oats, milk, water and cinnamon in a heavy based saucepan. Bring up to a gentle simmer, stirring frequently, and cook for 5 minutes or until thick and creamy. Add a splash more milk or water if it is getting too thick.

  • Step 2

    Stir through the diced Pink Lady apple, cooking for just another 30 seconds or so to warm the apple through.

  • Step 3

    Spoon into bowls, sprinkle brown sugar to taste and scatter on the pecans. Serve immediately while piping hot.
