It’s as if all the British confectionery favourites have been shovelled onto the pages of Life Is Sweet by Hope And Greenwood. There are loads of sweet treats to choose from, such as Proper Peanut Brittle, Toffee Apples and this melt-in-your mouth Coconut Ice which we are featuring here:

Coconut Ice

There are a million ways to make coconut ice, but this version from Hope And Greenwood is as good as it gets. You don’t have to cook it at all, and it will keep for a month in an airtight container. However, although these sweets take just half an hour to make, remember to plan ahead because the mixture works best if it’s left to set overnight.

Ingredients

  • 500g icing sugar
  • 800g (2x400g) condensed milk
  • 400g desiccated coconut
  • pink food colouring

Method

  • STEP 1

Line a 20cm (8in) square baking tin (4cm/11/2in deep) with cling film.

  • STEP 2

Sift the icing sugar into a bowl, then add the condensed milk and stir the mixture with a wooden spoon. Then roll up your sleeves and get stuck in with your hands and knead the mixture. Gradually add the coconut, kneading the stiffening mixture until all the coconut is mixed in – it’s hard work and takes a little while.

  • STEP 3

Colour the remaining half pink using the food colouring – it can be as pink as you wish. Mix it well.

  • STEP 4

Take small balls of the pink mix and place them over the white coconut mix in the tin. Using your hand, press the pink mixture over the white to form an even layer. Allow to set for a few hours – overnight is best. Cut into squares and serve in little boxes.
