How to make retro coconut ice

Ingredients
- 500g icing sugar
- 800g (2x400g) condensed milk
- 400g desiccated coconut
- pink food colouring
Method
- STEP 1
Line a 20cm (8in) square baking tin (4cm/11/2in deep) with cling film.
- STEP 2
Sift the icing sugar into a bowl, then add the condensed milk and stir the mixture with a wooden spoon. Then roll up your sleeves and get stuck in with your hands and knead the mixture. Gradually add the coconut, kneading the stiffening mixture until all the coconut is mixed in – it’s hard work and takes a little while.
- STEP 3
Colour the remaining half pink using the food colouring – it can be as pink as you wish. Mix it well.
- STEP 4
Take small balls of the pink mix and place them over the white coconut mix in the tin. Using your hand, press the pink mixture over the white to form an even layer. Allow to set for a few hours – overnight is best. Cut into squares and serve in little boxes.
