3 Quick-Fix After School Fish Suppers

Ingredients
Lemon Baked Fish
- 1 pouch of Tilda Kids Vegetable Paella Rice
- ½tbsp olive oil
- 1 spring onion snipped
- 50g medallion of firm white fish
- Squeeze of lemon juice
- 25g green beans remove stalks and snip into 2-3 pieces
- 6 cherry tomatoes halved
Kids Kedgeree
- 1 pouch of Tilda Kids Mild Curry Rice
- 1 spring onion snipped
- ½tbsp olive oil
- 1tbsp frozen peas
- 1 small or half fillet smoked mackerel skin removed and flaked
- 1 egg
- Squeeze of lemon and • Handful of finely chopped parsley to garnish
Kids Cheesy Salmon & Pea Pilaf
- 1 pouch of Tilda Kids Cheese and Tomato Rice
- 1 spring onion snipped
- ½tbsp olive oil
- 2tbsp frozen peas
- 50g salmon cooked and flaked
- 1 handful of baby spinach leaves
Method
Lemon Baked Fish
- STEP 1
Preheat the oven to 180/Gas mark 5.
Cut a generous square of tin foil, brush the oil over the fish and place on the foil. Then add the other ingredients (except the rice). Draw up the corners to make a loose parcel and leave a small hole at the top. Heat the rice as per pack instructions and serve this alongside the fish.
Kids Kedgeree
- STEP 1
Place the egg in a pan of cold water, bring to the boil and allow to simmer for 7-8 minutes until hard boiled. While the egg is cooking, place the frozen peas in a pan of boiling water and cook for 4-5 minutes, drain and set aside
Once cool enough to handle, peel away the shell of the egg and finely chop. Heat the oil in a pan and add the chopped spring onion. Cook for a few minutes to soften.
Stir in the rice and cook for a further 3 minutes. Then stir in the mackerel and peas and allow to heat through. Sprinkle over the chopped egg, parsley and add a squeeze of lemon juice to serve.
Kids Cheesy Salmon & Pea Pilaf
- STEP 1
Place the frozen peas in a pan of boiling water and cook for 4-5 minutes, drain and set aside. Heat the oil in a pan and add the chopped spring onion. Cook for a few minutes to soften Stir in the rice and allow to cook for 3 minutes. Add the flaked salmon, peas and spinach.
Stir and allow to heat through until the spinach has wilted.
