Chocolate & marshmallows sandwich by Rachel Allen

This recipe is a variation on American s’mores, (so called because everyone wants “some more”) and is from Rachel Allen’s sixth cookbook Home Cooking. Rachel shows us how easy it is to feed your family great food, every day. From school run to bedtime, Rachel has suggestions that even the fussiest eater will love. We spoke to the mother of two about her foodie secrets…

What’s your earliest food memory? I do remember being taught to milk a cow when I was about five.
What was the first thing you ever cooked? Biscuits with my sister and mum.
How did it taste? I’m sure I thought it was delicious, even eaten raw from the bowl.
What’s your perfect family dinner? Really good roast chicken with roasted or mashed potatoes, purple sprouting broccoli or kale and lashings of gravy.
What’s the best way to tempt a fussy eater? Get them to grow it or pick it themselves.
What’s the perfect festival food? Roasted pig on a spit in a soft white roll with lots of crackling and apple sauce.
Your favourite recipe? It completely depends on my mood. It could be anything from roasted duck legs with lentils to chocolate fudge recipe.

Ingredients

  • digestive biscuits 2
  • chopped-up pieces of milk or dark chocolate or chocolate chips 1 tbsp
  • marshmallow 1

Method

  • Step 1

Preheat the oven to 180°C/350°F/Gas Mark 4. Place one digestive biscuit flat side up on a baking sheet then add the chocolate pieces and place the marshmallow on top. Bake in the oven for 5–8 minutes (keeping an eye on how it is cooking) or until the chocolate and marshmallow have completely melted together into a lovely gooey mess.

  • Step 2

Remove the marshmallow-topped biscuit from the oven and then immediately place the remaining biscuit on top, flat side down. Leave to cool a little or completely before eating. You can make several sandwiches at once, just increase the quantities of the ingredients.
