This is a vegetarian dish that is good enough for a main meal, but can also be served as a side dish to fish, chicken or meat
and leeks to the pan, cover and simmer for a further 2–3 minutes. Drain the vegetables. To make the sauce, melt the butter in a saucepan, add the flour and mix. Slowly pour in the milk while whisking and gently bring to the boil. Cook for 2–3 minutes
