Hard boil the eggs, then, while still warm, immerse in a cup of hot water with a teaspoon of food colouring and a dash of vinegar. Leave for 5–10 minutes until the shell is deeply coloured, then pat with kitchen paper. You can leave the eggs plain or scratch
