Healthy Food For Young Children by c (£12.99, Usborne) is the latest from the Usborne Parents’ Guides series. It’s beautifully illustrated and filled with recipes and tips on how to get children to eat well from an early age, including this delicious take on rösti.
Serves 4
Vegetable Rösti
Rösti originates from Italy and I particularly like the blend of different potatoes in this version.
Ingredients
2 tbsp olive oil
2 onions, finely chopped
100g (31/2 oz) potatoes, peeled and grated
100g (31/2 oz) sweet potatoes, peeled and grated
100g (31/2 oz) courgettes, cut into very fine strips
2 tbsp pine nuts, finely chopped
1 egg yolk, beaten
2 tbsp plain flour
Method
Heat the oil in a large frying pan. Add the onions, potatoes, sweet potatoes, courgettes and pine nuts and fry for 5 minutes or until soft. Leave to cool a little, spoon into a bowl and stir in the egg yolk and flour. Divide the mixture into eight equal quantities and shape into balls, then flatten each one slightly. Return the pan to the heat, addinga drop more oil if necessary, and cook the rösti
in small batches until golden brown on each side. Drain on kitchen paper and serve.
