Tomato Sauce

You can add what you like to this versatile sauce – from herbs to cooked sausages

Serves 4

Ingredients

8 tomatoes, peeled
2 tbsp olive oil
2 cloves of garlic, peeled
Salt and pepper

Method

Put the tomatoes in a bowl of boiling water and leave for 5 minutes. Poke them with a sharp knife – if the skin splits, they are ready to be peeled. Drain and set aside. Pour the oil into a saucepan and put on a medium to low heat. Gently fry the garlic, turning occasionally. Quarter the peeled tomatoes and add them to the garlic and simmer for 30–45 minutes, stirring occasionally so the mixture does not stick to the pan. Once you have a thickish sauce, remove the garlic and season to taste.
