Tandoori Phal by Atul Kochhar
Head chef at Benares Restaurant and Bar offers a favourite recipe
INGREDIENTS
For the grilled fruits:
1 red apple, cut into four, seeds removed
1 green apple, cut into four, seeds removed
½ mango, cut into 4 cm dices
2 slices of pineapple
1 star fruit, cut in four to six slices
For the marinade:
2 tbsp honey
1 tsp toasted sesame seeds
¼ tsp crushed black pepper
3 tbsp yoghurt
¼ tsp cardamom powder
1 bay leaf
1 tsp lime juice
1 tsp lime rind
METHOD
To marinade, mix all the ingredients together and marinate the fruits for 30 minutes. Cook the fruits on a skewer in a hot tandoor for three to five minutes to char them. Alternatively, fruits can be cooked in a hot oven for six to eight minutes. Serve warm with vanilla ice cream, drizzled with raspberry sauce.
