Succulent Peach Jam
Create this fragrant, sweet peach jam to make your breakfast meals special
Posted: 20 September 2012
Peaches, though not grown in the UK are always best when they have travelled the least distance. Buy up the spoils of the early autumn glut from the south of France now and make this intensely sweet and sticky jam that your child will adore.
Makes 3 small jars
8 ripe peaches, stoned and cut into 2cm chunks
750g (1lb 10oz) caster sugar
1 packet of pectin
The juice of 1 lemon
1 tsp vanilla essence
Put all of the ingredients into a large heavy-based pan and boil for 30 minutes, stirring very occasionally. Remove any of the scum from the top of the mixture and pour into sterilised jars.
