Pak Choi Noodles
These Pak Choi Noodles has a beautiful, sweet and zingy dressing

Serves 4
Ingredients
For the dressing
1 tbsp runny honey
1 tbsp soy sauce
1 tbsp lime juice
1 tbsp sesame oil
For the noodles
150g (51/2oz) fine egg noodles
2 heads of pak choi, cut into 1cm lengths
100g (31/2oz) French beans, cut into 1cm lengths
100g (31/2oz) broccoli florets, separated
2 carrots, peeled and cut into matchsticks
1 tbsp olive oil
1 chicken breast, cooked and shredded
A small bunch of chopped coriander, to serve
Method
First, make the dressing by mixing the honey, soy sauce, lime juice and sesame oil together. Bring a pot of salted water to the boil and cook the noodles until tender. Using tongs or two forks, lift out the noodles and strain in a colander. Place all of the vegetables into the pot and boil for 3 minutes or until cooked to your liking. Heat the oil in a large frying pan, then add the noodles, vegetables, shredded chicken and the dressing to the pan and stir until heated through. Serve in bowls with a little roughly chopped coriander sprinkled on top.
