Mixed Berry Jam

This beautiful, glistening, crimson jam is full of goodness

300g raspberries
150g blueberries
150g redcurrants
150g strawberries
Juice of 1/2 lemon
1 fresh bay leaf (optional)
150ml water
500g caster sugar


Simmer the fruit, lemon juice and bay leaf in a saucepan of water for 10 minutes. Add the sugar and stir until dissolved. Boil steadily for 30 minutes until set, then skim any waste from the surface. Cool for 20 minutes, then put into jars (Don’t forget to sterilise your jam jars by boiling them in water for 20 minutes first).
