Mediterranean Chicken Skewers

Chicken pieces marinated in lemon, garlic and olive oil and then barbecued is absolutely delicious

Makes 8 skewers


2 large chicken breast fillets, cut into 32 cubes
24 cherry tomatoes
6 cap mushrooms, cut into quarters
2 garlic cloves, crushed
Zest of 1 lemon, grated
2 tbsp lemon juice
2 tbsp olive oil
1 tbsp oregano leaves, chopped


Soak eight wooden skewers in water for 30 minutes. Thread a piece of chicken onto each one, followed by a tomato, then a piece of mushroom. Repeat twice for each skewer and finish with a piece of chicken. Put the skewers in a shallow, non-metallic dish. Mix the garlic, lemon zest, lemon juice, olive oil and chopped oregano. Pour over the skewers and toss well. Marinate for at least two hours, or overnight. Cook the skewers on a hot, lightly oiled barbecue grill for four minutes on each side, basting occasionally, until the chicken is cooked and the tomatoes have shrivelled slightly.
