Healthy Houmous
Creamy textured houmous with cucumber and carrot batons makes a healthy and delicious snack

Houmous is a lovely healthy snack and my children enjoy it with carrot sticks, celery, cucumber batons and slices of red pepper. I accompany it with a tomato, mozzarella, avocado and basil salad, drizzled with olive oil, a toasted wholemeal mini pitta, and a pot of grated Cheddar. Felix and Coco love to open the pitta pockets and make their own filling, trying different combinations.
Vary the recipe by adding smoked paprika, lemon juice, avocado and sun-dried tomatoes to the houmous and before blitzing.
Ingredients
1x400g can of chickpeas, drained
1 clove of garlic, finely chopped
1/2 tbsp tahini
50ml (2fl oz) olive oil
3 tsp ground cumin
4 drops of Tabasco, optional
Salt and pepper
Method
Put all the ingredients into a blender, except the salt and pepper, and whizz to the desired consistency. Season to taste with salt and pepper and mix through.
This recipe can also be made with different types of beans instead of chickpeas – haricot vert and butter beans are excellent alternatives.
