Necklace Cookies

Combine 3.5 cups of flour, 1 tablespoon of baking power and set to one side. Bind together 1 cup of softened butter and 1.5 cups of sugar. Gradually beat in two eggs and then add 2 teaspoons of vanilla essence. Then slowly mix in the flour mixture until it’s totally blended. Leave in the fridge for approximately 2 hours.  Preheat oven to 180˚C/350˚F/Gas Mark 4. Roll out the dough onto a lightly floured surface and use Hallowe’en-themed cookie cutters to make your shapes.  Place on greased cookie sheets and bake for 6–8 minutes or until lightly browned. Remove from the sheets and let them cool before decorating.

For the icing, take 2 cups of icing sugar and mix with half a cup of vanilla and 2 tablespoons of milk a bit at a time.  To make orange and black icing, simply add a drop of food colouring.
