Good Morning Granola

Granola is a tremendous start to the day and ideal as a topping for yoghurt

Makes 12 portions

Obviously, this is not recommended for those with a nut allergy and, for your children, be careful to pick out the whole nuts as they are a choking hazard.

Ingredients

400g (14oz) jumbo oats
3 tbsp olive oil
200ml (7fl oz) apple juice 
80g (23/4oz) whole unblanched almonds
50g (13/4oz) flaked almonds
50g (13/4oz) walnuts, chopped up a bit
125g (41/2oz) sunflower seeds
3 level tbsp linseeds or pumpkin seeds
3 level tbsp sesame seeds
3 tbsp flaked, toasted coconut
1 tsp ground cinnamon
100g (31/2oz) sultanas
200g (7oz) dried blueberries

Method

Line two baking trays with greaseproof paper and preheat the oven to 180ºC/350ºF/ Gas Mark 6. Throw all the ingredients, apart
from the sultanas and blueberries, into a bowl and mix. Spread the muesli over the two trays and bake for 30 minutes or until golden. It is important to stir it up every 10 minutes. 

Cool slightly and add the dried fruit. Leave to cool completely before storing in a plastic cereal container. It keeps well for up to two weeks. Serve with milk or sprinkled over yoghurt and fresh berries.
