Flapjacks

This recipe is from the company Urban Fresh and is a great healthy treat for a party

Ingredients

200g (7oz) unsalted butter
200g (7oz) demerara sugar
200g (1/2 cup) honey
350g (12oz) jumbo porridge oats
3 handfuls of dried fruit such as pineapple, papaya or cranberries

Method 

Preheat the oven to 190°C/375°F/Gas Mark 5. Melt the butter, sugar and honey in a pan until the sugar has dissolved. Add the oats and dried fruits and mix well. Transfer to a cake tin (20x30cm), which has been greased with butter. Pat down the mixture with a spoon and bake in the oven for 15–20 minutes or until the edges are golden brown. Leave to cool before cutting into squares.
