Eggs In A Nest, Serves 4

■ 2 large baking potatoes
■ 100g Cheddar cheese, grated
■ A handful of chopped chives

■ A handful of chopped parsley
■ 4 small eggs
■ Freshly ground pepper

Preheat oven to 200°C (Gas Mark 6). Bake the potatoes for an hour, then cut in half lengthways. Scoop out the flesh into a bowl, keeping the skins whole.

Set aside about a quarter of the cheese and herbs. Using a fork, mash the remaining cheese and herbs together with the potato flesh until smooth. Pack the skins with the mash, then use the back of a spoon to form a “nest” in the middle of the mash – large enough to hold an egg.

Place the potatoes on a baking tray, then crack an egg into each nest. Sprinkle with the remaining cheese and herbs and bake for 10 minutes until the white has set, but the yolk is slightly runny
