Coco’s Waffles
This waffle recipe is a great one to make with children as a special treat

Makes 8 small waffles
It’s not just the taste that children enjoy, they love all the weighing and measuring and seeing the egg whites transform from a gooey mess into a fluffy white pillow. It is similar to a basic pancake recipe and is made even easier by using a good waffle maker.
Ingredients
3 eggs, separated
50g (13/4oz) melted butter
250ml (9fl oz) milk
175g (6oz) plain flour
A pinch of salt
1 soup spoon caster sugar
1/2 tsp vanilla extract
Method
Beat the egg yolks using an electric whisk. Mix the melted butter and milk together and pour into the egg yolk mixture. Add a pinch of salt to the flour and mix with the eggy mixture. Whisk the egg whites until light and fluffy and add the sugar and vanilla. Mix the whites into the rest of the batter. Place the mixture in a hot frying pan and cook for 1–2 minutes each side or place in a waffle machine and follow the cooking instructions.
