Coco’s Omelette With Fresh Herbs

This omelette with melted cheese and a sprinkling of tarragon and dill is absolutely scrummy

Makes 1 omelette

Anything such as bacon, smoked salmon or mushrooms can fill an omelette, but Coco loves herbs– a perfect combination with cheese. 


3 eggs 
Salt and pepper 
A knob of butter
A handful of grated Gruyère
3 sprigs of tarragon, chopped
3 sprigs of dill, chopped


Whisk 3 eggs in a bowl and add the salt and pepper. Heat the butter in a frying pan and pour in the eggs. When they begin to colour, push the edges into the middle of the pan using a spatula, so the runny egg fills the gaps. Sprinkle with the cheese and herbs. Continue cooking until it is almost set. Flip onto a plate, folding it in half as it slides out of the pan.
