Blueberry Pancakes for Shrove Tuesday

Celebrate Pancake Day with an all-American breakfast

Makes 8 pancakes

You are probably not going to be able to whisk these up every morning before the school run, but for a lazy Sunday morning or an extra special brekkie, these are the business.

Ingredients

150g (51/2oz) white spelt or plain flour
1 tsp baking powder
60g (2 1/4oz) caster sugar
1 egg
150ml ( 1/4 pint) milk
250g (9oz) blueberries
A big knob of butter
Assorted fruit, sliced banana and honey or crispy bacon to serve

Method 

Sift the flour and baking powder into a bowl. Add the sugar. Whisk together the egg and milk, then pour into the dry ingredients. Mix and finally add the blueberries. Pop in the fridge for half an hour, if you have time.Melt the butter in a large frying pan. When it starts to bubble, plop a tablespoon of batter per pancake in the pan. 

Fry for two minutes on each side or until golden. Serve with lots of fruit, sliced banana and honey or crispy bacon and maple syrup.
