Banana Bread

A loaf of banana bread is great for children – they can grab a piece on the way to school, or enjoy a slice with a little butter at teatime

125g (41/2oz) soft butter, cut into cubes
150g (51/2oz) golden caster sugar
3 large, very ripe bananas, peeled and mashed
1 tsp ground cinnamon (optional)
1/2 tsp vanilla extract
175g (6oz) self-raising flour
2 eggs


Preheat the oven to 170ºC/325ºF/Gas Mark 3.

Butter, then line a loaf tin with greaseproof paper – this helps the banana bread slide out of the loaf tin once it is cooked. Using a hand-held electric whisk, cream the butter and sugar together for three to four minutes. Stir in the mashed bananas, cinnamon and the vanilla extract and mix. Add half the flour and whisk. Crack in the eggs and whisk. Add the remaining flour and mix until everything is combined. It may look a bit lumpy, but don’t worry, this is just the chunks of banana. Scoop the mixture into the loaf tin and bake in the oven for one hour. Leave in the tin to cool before serving sliced and spread with butter.
