American Sticky Ribs
Serves 4
Ingredients
900g (2lb) lean pork spare ribs
125g (41/2oz) hoisin sauce
2 tbsp mild clear honey
2 tsp English mustard
3 tsp white wine or cider vinegar
4 tbsp tomato ketchup
2 garlic cloves, crushed
4 tbsp fresh apple or orange juice
Coleslaw, onion rings and orange wedges, to serve
Method
Preheat the oven to 180°C/350°F/Gas Mark 4. Line a large tin with a double layer of foil and spread the ribs over the base. Whisk together the remaining ingredients in a bowl, then spoon over the pork – it may look as though there isn’t enough liquid, but the ribs will release plenty of juices as they cook. Cover with foil and cook for 20 minutes.
Turn the ribs over , then put in the oven, uncovered. Cook for 40–45 minutes, basting from time to time until dark golden and sticky, and most of the liquid has gone.Serve hot, accompanied by coleslaw, onion rings and orange wedges.
