American Apple Pie
This is a super-easy version of a traditional American apple pie

Serves 4 adults or 8 children
Make sure you use a really good short sweet pastry; it may be crumbly, but it tastes divine. For a sweet little twist, I add a teaspoon of cinnamon to the filling.
75g (23/4oz) butter
6 royal gala apples, peeled, cored and quartered
100g (31/2oz) golden caster sugar
1 tsp cinnamon
300g (101/2oz) good quality sweet shortcrust pastry
Melt the butter in a large pan over a medium heat. Stir in the apples, sugar and cinnamon and gently simmer for 20 minutes, stirring occasionally. Preheat the oven to 220°C/425°F/Gas Mark 7.
Butter a 22cm round flan tin. Roll out the pastry, so that when it is laid in the flan tin it drops over the edges of the tin by about 1 inch. Press the pastry gently into the tin leaving the edges flopping over the sides. Pour the apples onto the pastry, then flip the edges of the pastry back towards the centre of the tin. Bake the apple pie in the oven for 15 minutes. Serve warm with either custard or cream.
