Amazing Strawberries And Cream Cake
This is an easy recipe and makes a beautiful cake, but it should be eaten on the day of baking – not usually a problem!

85g (3oz) granulated sugar
85g (3oz) self-raising flour
300ml whipping cream
11/2 punnets strawberries
Preheat the oven to 180°C/350°F/Gas Mark 4. Using a hand-held electric whisk, whizz the eggs for a few minutes until thick and pale. Whizz in the sugar. Fold in the self-raising flour. Pour mixture into two greased seven-inch sandwich tins. Cook for 8 minutes or until the top is light brown. Place the strawberries on top.
