Mark Hix, the much-lauded chef, owner of four restaurants, and father of Ellie and Lydia, 15, reveals some culinary secrets
What’s your earliest food memory? My granddad used to grow tomatoes and we used to have those fresh from the garden with Sarsons vinegar on them. You can’t beat the smell and taste of homegrown tomatoes.
What was the first thing you ever cooked? Pineapple Upside Down Cake in Domestic Science at school. Many years later, it appeared on the menu at J Sheekey.
How did it taste? Delicious!
What’s your perfect family dinner? Roast chicken – it’s the perfect home comfort, feasting food.
What’s the best way to tempt a fussy eater? Put it in breadcrumbs.
What’s the perfect festival food? Hand held food that feels lazy and celebratory at the same time.
Your favourite recipe? It changes every few months depending on the season and what produce is available.
